Speedster Darcie Brown broke through early for SA, thanks to a spectacular catch by wicketkeeper Bridget Patterson.
Brown quickly followed up her efforts, snagging the wicket of Australian skipper Sophie Molineux for just five.
Leg spinner Amanda-Jade Wellington also picked up her 166th WNCL wicket - equalling Australian cricket great Lisa Sthalekar for most wickets of all time in the competition.
South Australia toiled with the ball as Annabel Sutherland piled on the runs, with skipper Jemma Barsby eventually claiming her wicket for 134.
After some late cameos from the Vics, South Australia were set an imposing total of 268 to chase.
Despite losing English batter Holly Armitage early in the innings, South Australia were able to get off to an attacking start, with Emma de Broughe (82) and Courtney Webb showing early intent.
The classy pair put on an impressive 115-run partnership, before Webb was dismissed for 51.
Her wicket didn’t stop the run fest, with power hitter Maddie Penna picking up where her teammate left off, bringing up her half century in under 50 balls.
Experienced duo Tahlia McGrath (43) and Bridget Patterson (43) iced the game for their side, putting together a rock solid 82-run partnership to secure the win.
South Australia have now won its last four games, with the team set to take on the ACT in Canberra in a double header on February 22 and 24.
