After being sent into the field, the West End Redbacks claimed just one wicket for the day on a docile pitch at CitiPower Centre in St Kilda.
Victoria’s Nic Maddinson and Test opener Marcus Harris both crafted centuries to help the home side to 1/362 at stumps on the first day of the season-opener.
Harris smashed nine fours and four sixes to post a total of 116 but was undone in the 58th over, caught at gully off the bowling of SA swingman Nick Winter.
Maddinson remains unbeaten on 195 alongside Will Pucovski who is not out on 45.
Wicket-taker Winter was tidy with his lines all day, giving up just 46 from his 16 overs on a luckless day for the visitors.
Young teammate Luke Robins, playing just his fourth first-class fixture, also kept his economy under three, conceding just 51 runs from 18 overs.
The Redbacks are without key bowling trio Chadd Sayers, Joe Mennie and Daniel Worrall who were all unavailable due to injury.
Opening batsman Henry Hunt was presented SA cap 638 by Greg Blewett before the day’s play to mark his first-class debut for the state.
