Day 1 – Thursday 6th December 2018

ENTRÉE

Chermoula prawn salad, mint, coriander, cucumber, black quinoa, saffron & honey aioli

MAIN (served alternately)

Braised lamb rump, thyme & garlic gallet, sous-vide fennel, baked heirloom carrot, fennel, orange dust

or

Cajun rubbed chicken breast, roast corn puree, Mediterranean pepperonata, sautéed greens & salsa verde

 

Day 2 – Friday 7th December 2018

ENTRÉE

Smoked duck breast, caramelised yoghurt, blood plum, salted olive, mustard leaves & walnuts

MAIN (served alternately)

Pan fried barramundi, tomato & fennel compote, sweet potato lyonnaise, asparagus, preserved lemon & fine herbs

or

Charred beef fillet, potato & horseradish hash, mushroom ketchup, balsamic roasted beetroots, mustard butter

 

Day 3 – Saturday 8th December 2018

ENTRÉE

Poached chicken & waldorf salad, celery, apple, walnut, roquefort with mustard oil & fine herb

MAIN (served alternately)

Slow cooked Lamb Shoulder, tarragon & zucchini risotto, pomegranate, garden peas & molasses jus 

or

Atlantic salmon fillet, grilled brocollini, miso butter, fermented chilli glaze, shiso & toasted sesame

 

Day 4 - Sunday 9th December 2018

ENTRÉE

Marinated King Prawns, nam jim pressed watermelon, sweet radish, watercress, chestnut and mint

MAIN (served alternately)

Charred chicken breast, confit garlic & thyme hash, creamed leek, roasted baby corn & sesame puff

or

Slow cooked beef fillet, parsnip puree, honey & cumin baked baby carrots, vegetable crisps, trussed tomato & port jus

 

EACH DAILY LUNCHEON INCLUDES THE GOURMET DESSERT BUFFET

Chocolate fountain with marshmallows, mud cake & strawberries, Chef’s selection of mini desserts & sliced seasonal fruits
