Day 1 – Saturday 2nd December 2017

ENTRÉE

Poached king prawn,chimichurri salsa, shallot, petit cos, red pepper coulis

MAIN (served alternately)

Beef fillet, potato velvet, smoked speck and wild mushroom fricassee, buttered beans, thyme jus

or

Smoked paprika chicken, semidried tomato and basil arancini, grilled haloumi, chorizo crumb, asparagus, tomato and olive salsa

 

 

 

Day 2 – Sunday 3rd December 2017

ENTRÉE

Cold smoked duck fillet, du puy lentils, sticky red wine poached pear, arugula and parmesan crisps

MAIN (served alternately)

Roasted rack of lamb, garden pea and mint risotto, honey soused heirloom carrots and jus

or

Yoder smoked BBQ beef ribs, sweet potato puree, crispy speck, pickled red cabbage, house made ketchup

 

 

 

Day 3 – Monday 4th December 2017

ENTRÉE

Marinated king prawns, pickled grapes, cucumber, pea vine, lemon and tarragon emulsion

MAIN (served alternately)

Charred beef fillet, parsnip puree, honey glazed heirloom carrots, vegetable crisps and port jus

or

Lamb rack, braised lamb neck, smoked kipfler potato, mushy peas, juniper and olive spiced glaze

 

Day 4 - Tuesday 5th December 2017

ENTRÉE

Mediterranean rubbed lamb, smoked sheep's milk yoghurt, pearl couscous tabouli, tomato gel

MAIN (served alternately)

Beef fillet, baked three cheeses and herb gnocchi, portobello mushroom, tomato, shallot relish.

or

Pork cutlet, braised red cabbage, raisins, apples, roast hazelnut praline, buttered sprouts and jus

 

 

 

EACH DAILY DINNER INCLUDES THE GOURMET DESSERT BUFFET

Including: A chocolate fountain with marshmallows, mud cake and strawberries served with Chef’s selection of mini desserts and sliced seasonal fruits

Cheese platters served to each table
